		<description>Yes, yes, yes!  Coconut oil.  You know John, I do tell my clients to use this, but have yet to make it a regular part of my cooking.  I have it at home, and use it occasionally, but know the health benefits and need to make it more of a habit.  I just had a client who asked if she could find MCT in a pill.  I told her to get coconut oil and she was so excited at the prospect of cooking with something new. Thank you for the reminder...and yes the anti-inflammatory benefits!  This particular client has Crohn&#039;s.  I&#039;ll mention this next week on my web tv show when I&#039;m talking about cleansing.</description>

		<description>Hi Julie - great article! It sure outlines most of the essentials for a healthy diet.  And I agree 100% on your evaluation of margarine (ugh!).  Butter, and olive oil are terrific.  The other one high on my list of good fats is coconut oil.  It&#039;s great to eat/cook with.  Coconut oil along with Olive oil (1/3 - 2/3) plus spice of your choice makes a great salad dressing (cheaper &amp; healthier than store-bought crap!).

Coconut oil got a bad wrap years ago, by the corn/soy lobbyists.  Coconut oil is a medium chain fat (excellent!), &amp; is ultra stable for cooking purposes, as against the corn/soy unsaturated fats, which are unstable at high temperatures.

Some time, you might explain to your subscribers, the topic of inflammation, its causes and effects ( a big topic, eh?)!
