Non-Dairy Chocolate Mousse

2 packages of silken tofu

3/4 cup unsweetened cocoa

3/4 cup plus 2 Tablespoons maple syrup

2 teaspoons cinnamon

1 Tablespoon vanilla flavoring (Frontier-brand – not extract)

Mint leaves

Blend all ingredients, except for the mint leaves, in a food processor or blender. Pour into a container and chill in the refrigerator for several hours or overnight. Serve chilled and garnish each serving with mint leaves.
