Cashew Miso Salad Dressing


6 Tablespoons grapeseed oil

1/4 cup rice vinegar

1/4 cup raw or roasted cashews

1/4 cup brown rice miso (found at natural food stores) – can also use regular soy miso

1 whole garlic clove – peeled

4-6 Tablespoons water

Pinch of sea salt

Put all ingredients in a blender or Magic Bullet and blend until smooth and creamy. This is delicious as a salad dressing, or add less water to make it thicker to use as a dip for veggies or fruit.
