1 med onion, chopped
2 stalks celery, chopped
2 T grapeseed oil
3 med sweet potatoes, peeled and chopped
1 c cashews or cashew butter
5 c veg. broth
1/2 c chopped scallions
In soup pot or large Dutch oven over medium heat, saute onion and celery in oil until soft (4-6 min). Add sweet potatoes, cashews or cashew butter and vegetable stock. Bring to boil, reduce heat and simmer 20 minutes. Remove from heat and puree with handheld blender until smooth. Season to taste with salt and add stock or water to achieve desired consistency.
