This recipe is a variation on traditional hummus, using black beans instead of chickpeas. Try it as a wonderful dip for healthy-brand tortilla chips like PopChips, or as a veggie dip with red peppers and jicama. It’s also terrific as a spread for sandwiches or tortilla wraps.
1 can black bean – keep liquid
2 Tablespoons tahini (sesame seed paste)
1 clove garlic
1 teaspoon cumin
1/8 teaspoon cayenne
2 Tablespoons lemon juice
Dash of sea salt or to taste
Put all of the ingredients, including the liquid from the beans, into a VitaMix, blender or food processor. Blend until smooth or to your desired consistency. Chill and serve.
