Black Bean & Sweet Potato Burritos with Mile High Green Chili Sauce

Ingredients:

1 medium sweet potato
1 cup frozen sweet corn kernels, thawed
1 cup black beans
1 cup cooked brown rice
6 whole grain flour tortillas
3-4 cups prepared and heated
Lentil Walnut Pate
Ingredients:

2 cups Lentils, dried
8-10 cups Water
1 tablespoon Grapeseed oil
1 Onion, diced
4 Garlic cloves, minced
1 large head Broccoli , chopped
½ cup Walnut pieces
1 teaspoon Mustard powder
½ teaspoon Curry powder
To taste
Pumpkin Seed Jalapeno Dip


Yields 3 cups

1 ½ cups Pumpkin seeds, hulled, unsalted
3 tablespoons Grapeseed oil
2 Garlic cloves, crushed
¾ cup Broth, vegetable
¼ cup Lime juice

-Whole wheat tortillas

- Crumbled queso fresco or feta cheese
-1 breast cooked chicken (we defrost already-cooked chicken from Trader Joe’s or use leftovers)
-1/2 can of black beans rinsed
Game-Changing Morning Smoothie
4 ounces Almond milk, unsweetened
4 ounces Coconut water, unsweetened
½ Banana, frozen
¼ cup Mango, fresh
¼ cup Blueberries
1 handful Baby spinach
1 scoop JuicePlus+ Complete powder, vanilla

Blend all ingredients in
